A lot of my friends often wonder how I am able to cook a delicious Asian dish after a long day of work. they typically ask me, "Sope - How do you cook dinner when you work so late and commute one hour home every night?" "Where do you find the time?" I tell them it's pretty simple when you are organized, know the basic ingredients for every Asian meal, and have the ingredients ready. It's all about the preparation and organization that will make cooking any Asian meal a breeze. Most Asian meals start with the sauce, veggies and meat. Here's a quick list of what I store in my pantry on a daily basis.

Pantry items:

- Oyster Sauce (any brand will do) - Fish Sauce (I prefer the three crab, but any fish sauce will be fine) - Sugar - Chili Flakes (for a kick of spice!)

There's no need to measure anything. My basic rule of thumb is - the more oyster sauce and fish sauce you put the more flavor you will get. So, if you are not a fan of strong flavor, then use a small amount. If you want more flavors then I would suggest adding more. I tend to swirl the oyster sauce bottle two round and one round of fish sauce over the meat and veggies. A sprinkle of sugar and the stir fry dish is done! You can add any type of veggies and meat to your liking. And any type of peppers to add a kick of spice to the dish.

Famous restaurant recipes are not necessarily the tastiest of meals, but because we eat when we go out for pleasure, then you seem to relate the atmosphere and the ambience of a famous restaurant as being the tastiest of menus, because normally we are amongst friends and relatives.

How many of us have visited a famous restaurant and then after the meal, or even during it, you make a complaint to the chef and or the service, due to your steak being over/under cooked or your main course arriving and you having to endure a delay for the vegetables to arrive and then you find everything has gone cold.

The treatment in a famous restaurant then has the potential to create a negative feeling , for the rest of the evening, especially considering the cost of the meal for you and your family.

There are four basic Thai herbs and spices essential l for Thai cuisine, chilli, lemongrass, kaffir lime and galangal. Dishes such as Tom Yum Soup (spicy soup), Num Prik (Chillie Paste) and Gai Pad Kha (Siamise Ginger Chicken). A full Thai meal would consist of either a single dish or rice khao with many complementary dishes such as aromatic curries and stir fries. Rice is the staple food, and jasmine rice with its natural aroma is made as steamed rice. Highly aromatic curries and stir fries consisting of large quantities of chillies, lime juice and lemon grass accompany the rice. Noodles are also a very important part of Thai cuisine. The beauty of Thai cooking is that the recipe can be used as a guideline as the quantities of the ingredients can be varied according to taste. Vegetarian dishes can also be created. The secret of a delicious Thai dish for your family and friends is to be creative when combining all the flavours.

Well, it is that time of year again. It is time to throw on a few layers of clothes, grab the rifle and head to the woods for a cold day of tracking and hunting for you holiday feast. Oh, wait a minute. That is not how it is done these days. You are looking for cooking turkey tips, or turkey cooking tips, right?

OK, it is time to put down the remote control, get off the sofa, and head to the supermarket to buy your holiday turkey. For those who have never roasted one of the giant birds, the task might seem daunting. No worries, it is actually easy.

Of course, the first step is to buy the bird. I guess you already figured that one out. OK, now it gets easier than you expected. If the turkey has been frozen, it will take 24 hours of defrosting in the refrigerator for every five pounds of weight. The fridge is the safest way to defrost.

Use a shallow roasting pan. A dark pan is better than a shiny one, because the dark pan will cook the turkey faster. Cover that bad boy with butter. Do not be shy, because this is the holiday season. If you want to stuff it, then stuff it, but do so just before you put the bad boy in the oven, because you do not want the bacteria. Put a triple layer of aluminum foil under the bird on the roasting pan.

OK, here are some choices for you. Do not freak out, please! You can cover the bird or not cover the bird. You can cover it with a lid to the pan. You can bag it in a roasting bag. It is not recommended that you use a paper shopping bag, because most are recycled these days. That is good for the environment over all, but we do not know what will go in our bad boy bird. You can make a tent out of aluminum foil, but that will add more cooking time. Or, you can just let it all hang out and put the bird in the oven naked. You get to decide, because this is your crisis, not mine.

Stick a thermometer in the bird before you put him, or her, in the oven. That is the best way to know if he, or she, is fully cooked. Preheat your oven to 325 degrees, and cook the bird at that temperature or higher. You can find all sorts of different advice about how long you should cook a turkey. The equation is usually so many hours per pound. But it varies, so ask your butcher. She or he knows everything. Last step is to pull the perfectly cooked, delicious holiday turkey out of the oven, and enjoy.

Have you ever tried a Turkey Cajun Style; they are quite good. Perhaps you might want to take advantage as the unsold Turkeys go on sale right after Thanksgiving and that is generally a lot of meat per weight for the price. Let me tell you of one way to cook a 11-16 pound Turkey Cajun Style and you will absolutely love it.

First get a five-gallon pale of peanut oil, which is enough to soak your Turkey in. You will want to make sure it is totally under the peanut oil submerged. Then you will need some Creole Seasoning, one good brand is Tony Chachere. You will need a large pot big enough to submerge your Turkey and a way to raise and lower the turkey and a thermometer. Heat the oil with the seasoning in it to 350 degrees. Then cook your turkey by frying it for about 36 minutes to an hour based on the size of the turkey.

If the thing catches on fire raise the Turkey, put out the fire and start again, realizing to stop the timer. Be sure not to burn down the house. This Turkey will serve between 8-10 men, or athletic types. Only cool people make Cajun Turkey this way. Please do not share this Secret Recipe with anyone else. Thanks.

With just 10-15 minutes in the morning, these recipes will give you a delicious healthy Chinese meal with little preparation right before dinner; just cook some instant rice, spoon and serve.

Cashew Chicken

Ingredients:

2 medium chopped onions

1 can drained mushrooms

1 can drained bamboo shoots

1 can drained sliced water chestnuts

2 pounds boneless skinless chicken breasts, cut into 1 inch cubes

1 ? cups stir fry sauce

? tsp ground ginger

1- 16 ounce package frozen stir fry vegetables

1 cup cashews

Spray crock pot with non-stick cooking spray. Combine all ingredients except cashews in crock pot, stir well to mix. Cover and cook on low 7-8 hours or high 3-4 hours. Just before serving, stir in cashews. Serve over rice.

Sweet and Sour Chicken

Although you could use bottled sweet and sour sauce, I wanted to make it from scratch, and still found it easy!

Ingredients:

1 medium chopped onion

1 medium chopped green pepper

1 medium chopped red pepper

4 stalks chopped celery

2 pounds boneless skinless chicken breasts, cut into 1-inch cubes

1- 20 ounce can pineapple chunks

2 tbsp quick cooking tapioca

2 tbsp brown sugar

2 tbsp soy sauce

1 tsp ground ginger

2 cloves minced garlic

1 tbsp balsamic vinegar

? cup water

2 tsp lemon juice

Spray crock pot with non-stick cooking spray. Place vegetables in crock pot, place cubed chicken on top. Pour pineapple chunks, with juice, over chicken. In a small bowl combine tapioca, brown sugar, soy sauce, ginger, garlic, vinegar, water and lemon juice. Pour into crock pot. Cover and cook on low 8 hours or high 4 hours. Serve over rice.

Autumn is harvest time. You can certainly enjoy these tasty squash recipes any time of year, but they seem particularly good as the weather cools down and we go back to using our ovens again. Time to cook delicious comfort foods.

Either of these recipes can be made with a variety of squashes. I have just listed the squash I prefer to use. They are so easy. They just bake alongside a roast beef or chicken or anything else you may have the oven turned on for. And they are a great part of any healthy diet.

Citrus Baked Squash

1 butternut squash (or any squash you prefer)

a mixture of 1/2 orange juice and 1/2 water

Peel the squash and slice it crosswise, so some of the slices are thick circles, about 1-1 1/2" thick. Arrange the slices in a Pyrex type baking dish. The size depends on the amount you are cooking. Just make sure they are in a single layer in the dish, not on top of each other.

Pour the orange juice and water mixture over the squash until it reaches about half way up the slices. Cover with foil and bake in a 350?F for about 45 minutes, or until they are soft when a knife is inserted in the middle. Watch along the way to make sure the liquid does not dry out completely. If it does, just add a bit more.

Serve the slices drizzled with the extra orange sauce.

Sweet and Rich Pepper Squash

pepper squash (or any squash you prefer)

brown sugar

butter

cinnamon

Slice each pepper squash in half and clean out the cavity. Put a teaspoon of butter in each cavity. Add a dash of cinnamon and a teaspoon of brown sugar to each cavity.

Bake, covered in a 350?F oven for 30 minutes, then uncover it for the last 15-30 minutes, so the sugar sauce thickens.

This squash can be served as is, in halves in the skin. If you prefer you can scoop out the squash and sauce, mix it together and put it in a pretty serving dish.

I don't salt either of these recipes because I find them tasty enough as is, but feel free to add a bit of salt if you would like.

Slice your purple sweet onions very thin. Mix your hamburger meat, lipton's onion soup mix, salt and pepper in a large bowl and be sure to mix well. Pat your hamburgers out real thin about 2"X2"X1/2" and when you get all your hamburger patties made spread your onions out on a flat top grill or large skillet and place your hamburger patties on top of your onions. Cook your burgers flipping often until well done.Be sure to flip your onions over often also. You want the onions to grill and to end up under and on top of the hamburger patties.

You will want to serve your mini hamburger patties on your split rolls with grilled onions and your mustard sauce.

Mustard Sauce Recipe

1. 6 Tablespoons Mayonnaise.

2. 2 Tablespoons Dijon Mustard.

3. 1 Teaspoon Cayenne Pepper.

4. 1 Teaspoon Salt.

Flounder with Potato Scales

(2 servings)

This technique works especially well with frozen fish because the fish doesn't overcook by the time the potato slices become crispy. Use the same technique with frozen salmon, sole, bass or other relatively thin pieces of fish.

? 2 frozen flounder fillets? softened butter? 1 medium Russet potato, sliced paper thin? salt and pepper to taste

Place the fish on the 3-inch rack, spread with softened butter and season with salt and pepper. Lay the potato slices over the fish starting at the thick end and overlapping so they look like fish scales. Spray with oil and cook at 400?F for 12-15 minutes or until the potato slices are crispy. Carefully slip a long spatula under the fish and transfer to a plate.

Whole Salmon

(6 servings)

? 4-5 pound whole salmon, without the head? lemon slices? butter? dill weed

Place the fish in the glass cooking tray in the upright position with the belly flaps spread open. Make a 1-inch cut along the backbone and fill with butter. Cut lemon slices in half and insert in the slit with the butter. Cook at 400?F for about 12 minutes per pound or to an internal temperature of 150?F. Slide a couple of spatulas under the fish and carefully transfer to a serving platter. Pull the skin down and off the fish and serve as is with the juices or serve with Hollandaise Sauce.

Trio of Trout

(3 servings)

? 3, 6-8 inch whole trout? 2 tablespoons dill weed? 4 pats of butter? juice of a lemon? salt and pepper

Place the fish, belly side down around the edge of the glass tray. Add the other ingredients and cook at 400?F for 20 minutes or to an internal temperature of 150?F. Transfer the fish to plates, pull off the skin and pour the cooking juices evenly over the fish.

Shellfish

Broil-Steamed Clams

(2-4 servings)

Usually clams are steamed in a closed pot with some additional liquid. When you do them the Flavorwave way the resulting liquid is pure nectar and so delicious.

? 1-2 dozen fresh cherrystone clams, washed? 4 tablespoons butter? 4 cloves garlic, smashed? Crusty French bread

Place everything in a shallow pan that will hold the clams in a single layer. Cook on the 3-inch rack for 8-10 minutes at 400?F. Discard any clams that do not open. Serve with juices and sop juices with bread.

Is it me or are only certain types of people able to have fun cooking? Are some people just naturally able to follow recipes and get them right every time? I personally think the way to really enjoy cooking is by making easy recipes that taste great.

We have always struggled cooking dinner on a daily basis for our family but when you begin to see the fun in cooking, doing it daily becomes a breeze. Focusing on easy to cook recipes will assist in the fun element of cooking but in order to make the process run smoother we need to break cooking down into it's basic elements, prep, execution and clearing up.

Personally I would say that by preparing well will be the difference between how much you enjoy the execution and the overall cooking experience. Have you got all your ingredients? Do you have the necessary utensils? What needs slicing and dicing? What order do you need to do things and how long are individual elements going to take to cook?

Taking the preparation stage one step further, we always found it to be a good idea to plan our meals in advance. Make a checklist each week before you go for groceries, decide on the meals you are going to cook and make sure you have a list of necessary ingredients for each one.

You don't need to make the ingredients too complex either, start off small, make a nice pasta dinner with your own bolognaise made from fresh products, Grill some chicken and prepare your own marinate.

Once you have learned to enjoy the process try some advances methods, but remember to add you own preferences to what you cook, make it your own and this will add to the fun.

The benefits that you will receive through cooking your own meals will be more than you would have expected. Not only are you saving yourself and your family from the toxins of processed food or take out junk but you are also developing new skills. Encourage the family to become involved in the cooking process, let them give suggestions and let young children help prepare the meals. Getting everybody involved will only enhance the cooking experience and make it easier to do it on a consistent basis.

The important aspect of cooking to remember is the more fluently you can go through the process the more you will enjoy it and the more you enjoy it, the easier it will become.

I prefer to steam this tubes. You can also steam cassava. Put the cassava slices to stem pan. Stem the cassava done.

As I told in first paragraph, we can make chips to. Here are the steps :

1. Provide the tools such as : knife, fry pan, spatula, basin, plate, and others.

2. Peel the cassava. Wash it.

3. Slices thin the tubes with sharp knife or you can use slices machine. The slice machine can slice the cassava fast.

4. Fry the cassava slice until done. You can use coconut oil or peanut oil. Lift the chips when it done.

5. You can add salt or sugar powder to the chips.You can also add palm sugar if you like it.?

6. In my country, people add chili sauce to the cassava. They blend red chili, onion, garlic, few sugar and few salt.?

No one ever said that a culinary arts training program was easy. It takes real skill and dedication to make it work. It also takes an open mind when it comes to obtaining that sought after job across the country, and then having to relocate.

You have to go where the work is and what is best for you. Culinary students from all of the top schools can tell you that it is not a cake walk. You have to be willing to check your ego at the door and learn all of the technical terms, if you want to succeed at cooking professionally.

For those who elect not to go through any formal culinary arts training program, in order to obtain a culinary degree from one of the best culinary schools, there is still hope to learn those technical terms that plague the novice home chef. Words such as: coddle, poach, julienne, and chiffonade can all be confusing to those not well versed in the kitchen dictionary of culinary techniques.

There are many resources in the culinary community to help you learn some of the most foreign terms. A simple web search of "culinary terms" yields great results; however, just in case you missed it, here are some definitions of the more obscure terms. Chiffonade literally means "made of rags" and is a technique used with a knife on flat, pliant vegetation, such as basil, lettuce or cabbage.

Using basil as an example, you simply stack the pieces of basil on top of each other. You then roll the basil into a tight round tube. The next step is to run your knife down the length of the tube and cut into fine strips. You have now mastered the chiffonade technique.

Did you know that to "coddle" is to slowly cook a dish to just under the boiling point. This term mostly applies to eggs, such as in the poaching technique. There are hundreds of other terms tossed about frequently in the kitchen. No one is expecting you to be a culinary whiz and know them all right off the bat. Culinary students work continuously on learning these terms and techniques.

The next time you come across culinary students struggling to learn the technique of a chiffonade, you will be able to instruct them. You will know something that they do not know yet and it does not matter if you are in a culinary arts training program or if you have a culinary degree.

The whole point of cooking is to learn something new each time you set out to prepare a dish. You will learn from your mistakes and make the whole journey worth it in the end.

Culinary maestro, Gaston Acurio has made efforts to leverage Peru's gastronomical delights to produce a more equitable society. His 3-year old cooking school at the Pachacutec vocational institute has been making the news lately for offering world-class culinary school to ordinary Peruvians. Acurio believes chefs like himself who cater to wealthy palates have a moral duty to raise the living standards in countries like Peru where nearly 2 in 5 live on less than $2 a day. Well-to-do Peruvians pay upwards of $700 per month to attend renowned culinary schools, but Pachacutec costs just $30 per month for an education every bit as demanding. The surrounding desert of Pachacutec is home to over 100,000 people, many who are extremely poor and have malnutrition.

Acurio has garnered attention for Peruvian cuisine throughout the world. He owns nearly 30 restaurants both in Peru and abroad. For the cooking school, Acurio has enlisted top chefs including Catalan, Ferran Adria, as well as other chefs from Acurio's restaurants. The school's library, housed in a metal shipping container, has over 2,500 cookbooks that were sent from Spain by famous chefs. Lima's municipal water company donates water by trucking it in and filling the school's five 185-gallon wells. Each student is responsible for the care of two plants and cooking ingredients are donated by restaurant suppliers. The Roman Catholic Church also provides funding.

As part of their school, hardworking second-year students at Pachacutec are given a part-time job at Acurio's restaurants around Lima. Students of Pachacutec will have a better chance to get a good job. Cooking won't eliminate poverty, but it helps to create, small, integrated economies between farmers, restaurants, fisherman, taxis and hotels. A study by the Peruvian Gastronomy Society found that most of the nation's chefs earn about $500 a month. The first class graduated nine students in 2009 and all have jobs. The two-year program at Pachacutec receives about 500 applications a year, but only accepts 40 students.

Peruvian cuisine fuses native traditions with European, African, and Asian influences using an abundance of fresh ingredients including local seafood and potatoes. The son of a former prime minister, Acurio graduated from Cordon Bleu in Paris and returned home to open his first restaurant, Astrid & Gaston, in 1994. He is still passionate about promoting Peruvian cuisine, and often endorses Pachacutec and culinary schools open to all classes.
