The crockpot home cooker hit the market in 1970 and sales have been going strong ever since. This product has singlehandedly changed the way people prepare meals. Current models allow the cooking time, and even recipes, to be pre-programmed. A crockpot represents the ultimate in convenience when cooking entrees, vegetables, and other types of food.

Cooking vegetables in the crockpot enables the chef to whip up dishes like cheesy broccoli and cauliflower, candied sweet potatoes, and asparagus casserole. There are hundreds of vegetable recipes available online and in cook books for slow cooking methods. Online, individuals can even add their names to a list in order to receive a weekly crockpot recipe.

A simple recipe involves cooking a variety of vegetables in the pot for use as a side dish. Wash and trim the vegetables, then place them in the crockpot while they are still moist. Drizzle a tablespoon or two of olive oil over the top, add a pinch each of salt and pepper, and then toss the vegetables to coat them. Cover the crockpot and cook the ingredients on high heat for two to three hours, or low heat for four hours, stirring and checking every hour. The result will be a tasty and crispy vegetable mixture that can be used as the ingredient in a meat recipe or eaten as a side dish.

People who do not enjoy eating vegetables by themselves can use them as ingredients in an entree recipe that contains meat. Carrots, onions, and other slow-cooking root vegetables should be put in the bottom of the pot, under the meat. The ingredients on the bottom of the pot tend to cook faster than those on the top. The result will be that the vegetables and meat finish cooking at the same time.

Some popular Portuguese recipes include:

* Alheira - Portuguese sausage. It is made using meats other than pork, such as chicken, duck, rabbit or veal. It is usually cooked by frying in olive oil, and then served with boiled vegetables and potatoes. The sausages origins lie in the Portuguese Inquisition when the Portuguese Jews invented it as a way to deceive the Portuguese Inquisition.

* Caldeira - A mixed fish stew (it may also sometimes contain shellfish). The stew contains onions, potatoes and tomatoes and is flavored with spices. The exact choice of spices used may vary, but allspice, cloves, curry power, ground ginger, nutmeg, piri-piri and saffron are common.

* Cozido ? portuguesa - A meat stew. It may be made using pork, beef or chicken. Other ingredients usually include Portuguese smoked sausage, cabbage, carrots, potatoes, rice and turnips.

* Cabidela - A dish made from chicken or rabbit. After the animal is killed, it is hung upside down and the blood drained. Rice is then cooked together with the meat and the blood.

* Bacalhau - Salted cod. There are many ways that it can be prepared - some Portuguese claim that as many as a thousand different ways.

* Sardinhas assadas - Grilled sardines

Seemingly, there is as much mystery surrounding the origins of the "caja china" as there is about how to use one for those not familiar with the roaster. Stories have been told about the roughly 150,000 Chinese laborers who came to Cuba in the 1850's, and that they brought the cooking style to the island, hence the term "caja china." Research, however, indicates no known record of the roasting box dating this far back. In fact, there appears to have been relatively little co-mingling between the Chinese and Cuban cuisines. So where then did the box originate, and where did the name "la caja china" (the Chinese box) come from?

According to food anthropologist Sidney Mintz, a more likely scenario is that the term "china" or "chino" does not represent the country in this case, but is actually a common Hispanic term that describes something as exotic, mysterious, or clever. Using this interpretation, "la caja china" would translate as "the clever box" rather than "the Chinese box." This hypothesis is strengthened by renowned Cuban chef Maricel Presilla of the restaurant Zafra in New Jersey when she states, "Cubans like to call anything that is unusual or clever Chinese. And this is true all over the Caribbean. Pretty much any culture there, whether Cuban or Puerto Rican or Dominican, they have somewhere some kind of thing like this-a Caja China." (Sifton) Variations on the box can be found in various countries, and go by a variety of names. In Peru there is the "caja china criollo," in the Cuban community the "caja asadora" (roasting box) and "asador cubana" (Cuban roaster).

In Louisiana's Cajun community it is referred to as a "Cajun microwave." The reality is that all these roaster boxes are very similar in their style of cooking, using heat from charcoal and the pressure of an enclosed roasting box to cook large amounts of food in an incredibly short amount of time. Not only is the cooking time shortened from eight or more hours for a large pig to just four, but the meat comes out incredibly tender. Rattlesnake meat is a southwestern delicacy. If you haven't ever eaten rattlesnake, you are in for a real treat. No, it doesn't taste like chicken! It has a much gamier flavor - much more reminiscent of pheasant, frog legs, alligator, or even elk.

There are two ways to cook rattlesnake meat: De-boned, or with the bones still intact. If you cook it with the bones intact you will have to deal with them while eating it. This is no big deal really, and in fact many "just the snake" type recipes (baked snake, southern fired snake, etc.) call for the snake to be cut into pieces and cooked with the bones.

Using the snake meat in chili or other dishes where the meat is blended into the dish calls for removing the bones. This can be done by simmering the snake carcass for an hour in a pot of water with some lemon juice and maybe a little bit of spices. Then the meat will come off the bones easily. Be sure to taste it before mixing it in with the other ingredients!

Here is an easy-to-make recipe for Rattlesnake Chili:

1 large onion, chopped

3 large garlic cloves, minced

1 red bell pepper, chopped

3 jalapeno peppers, chopped

1 28 oz. can diced tomatoes

1 15 oz. can tomato paste

1 28 oz. can chili beans

1/4 cup chili powder

2 tsp. cumin

1 tsp. salt

1 tsp. black pepper

2 lb. rattlesnake meat

juice from 1/2 lemon

Simmer rattlesnake in water and lemon juice for 1 hour, remove and separate meat from bones.

Combine de-boned meat with the rest of the ingredients in a crockpot and slow-cook for 6-8 hours, or bring to boil in large cooking pot and simmer for 2 hours.

As we know pho is traditional noodle soup from Vietnam. If we ask someone to name Vietnamese dishes, mostly Pho will be on top of the list. The well known version of Pho is beef pho (Pho Bo) whilst chicken pho (Pho Ga) has gained popularity recently. Pho ga consists of chicken meat, rice noodle and clear broth. Mostly served with some condiments such as herbs, beans sprouts and sauces. The broth has distinctive fragrant aroma and flavorful since it is simmered in spices for long hours.

Despite the convenience of buying pho from your favorite Vietnamese restaurant, nothing beats as your own homemade noodle soup. Here is my easy and quick recipe of pho ga. It will take just about 45 minutes from start to finish instead of the usual 3-4 hours.

What You Need for Fixing Pho Ga

Serve 4

Ingredients:

2 lbs chicken breast

3 star anise

3 cloves

1 tbsp coriander seeds

8 cups chicken stock

1 small onion

1 ginger (2-inch)

2 tbsp fish sauce

1/2 oz rock sugar

8 oz dry flat rice noodles

Garnish:

2 cup beansprouts, washed and drained

coriander leaves or cilantro

mints leaves

basil leaves

lime wedges

Thai red chili, thinly sliced

scallion, thinly sliced

onion or red onion, thinly sliced

fish sauce

chili sauce or sriracha sauce

hoisin sauce

Growing up I was one of eleven children. The oldest child,my sister, was a "downs" followed by my two older brothers. I was fourth in line with seven younger brothers and sisters. Needless to say, I was taught at a very early age how to cook. In fact, all the girls were taught to cook,clean and help! With 13 people in the house, someone was always hungry and we got plenty of practice.

Today, my mom is 83yrs. old and still a wonderful cook. Sunday dinners are still a ritual for all of us along with oodles of grandchildren! Nobody can compete against mama's homestyle cooking! Recently we got together and comprised a family cookbook with mama's "specialty" recipes along with some of our own favorites. I would like to share a couple of these scrumptious recipes with you.

CORNBREAD DRESSING

Ingredients:

1 to 1 1/2lbs. ground pork 1 large onion chopped finely 1 large green bell pepper chopped finely 3 stalks finely chopped 1 can cream of celery soup 1 can cream of chicken soup 1 large cornbread precooked

Generously season pork with salt, pepper, and garlic powder. Brown meat in heavy pot in a little oil, shredding pieces of meat with fork or pastry cutter until no chunks remain. When meat has browned a little, add chopped onions, celery, and bell peppers. Let cook until vegetables are soft. Then add cream of celery soup and cream of chicken soup. Add 1 can of water to mixture. Stir well. Let mixture come to a boiling point. Mix well, lower heat, cover,and let cook about 1 hour. Stir occasionally. Add cooked cornbread and mix well. Chopped green onion tops and parsley can be added if desired.

Great for family get-togethers. Loved by all.

HOME MADE MACARONI AND CHEESE

Ingredients:

1 8oz. box macaroni shells 1 8oz. can evaporated milk 4 eggs beaten 16 slices American cheese (cut up) "smidgen" of regular milk (1/3 cup) 1 tbsp. oleo 1 tsp. salt

Boil shells, drain. Mix shells along with other ingredients in casserole dish. Bake at 400 until brown. Enjoy!

Do you love Japanese food? The funny thing about Japanese food is that you either love it or you hate it. There is no in-between. And chances are, if you hate it, you probably haven't really tasted Japanese food yet or haven't given yourself a chance to sample it enough. Japanese food is hard to appreciate after only one bite. And sometimes, the idea that you are tasting raw food just won't escape your mind that you are already predisposed to hating Japanese food even before you actually taste it.

Personally, I love Japanese food. There really is no other cuisine like it in the world in terms of its unique taste and presentation. Who would believe that something so raw could be so delicious? For those of you who have not yet discovered the pleasures of Japanese food, allow me to present the following primer.

The standard Japanese meal always involves a bowl of white rice as well as soup and side dishes such as pickles, vegetables, meat and fish. Japanese food is classified by the number of viands or "okazu" that are served with the rice, soup and side dishes. A meal with one okazu is called ichiju-issai and a prime example of this is the traditional Japanese breakfast which consists of miso soup, rice, grilled fish and one pickled vegetable.

The regular Japanese meal usually involves three okazu to go along with the soup, rice and pickles. Traditionally, each of these three okazu are cooked in a different way from the others. They can either be served raw or grilled, simmered, steamed or deep fried.

Another hallmark of Japanese food is seafood, which is the most popular and most widely consumed food in Japan. The most popular dishes include all types of fish as well as shellfish, squid and octopus. Crab is another favorite delicacy and so are whale and seaweed. Despite the fact that Japanese are not heavy meat eaters, you will hardly find any vegetarians among them either probably owing to their deep fashion for seafood. Beef and chicken are also popular among the Japanese.

Easy way to make summer sausage at home

You don't have to have a Southern heritage to enjoy homemade summer sausage but making summer sausage is a down home Southern tradition. If you don't know what summer sausage is, it's a home made sausage that is a little like commercial smoked sausage or the kind of sausage folks buy from Hickory Farms around the holiday season to slice and eat on crackers.

This recipe was originally designed to be used with ground venison (deer) which is natural since many Southern men are avid hunters but it also works just fine with ground beef from the supermarket.

Here are the ingredients needed to make summer sausage:

2 pounds ground venison or lean ground beef (ground round is good)

1 cup cold water

2 tablespoons Tender Quick (this product is found in the seasoning aisle at the supermarket and will last you a long, long time)

1 1/2 teaspoons liquid smoke

1 teaspoon garlic powder

1 teaspoon onion powder

2 Jalapeno peppers chopped very fine (leave out if you don't care for the spicy flavor)

Combine all ingredients together in a large mixing bowl and blend very, very well. Shape meat mixture into three thin, long loaves - something like an ear of corn. Wrap each loaf with foil and wrap very tight. Refrigerate these for at least twenty-four hours so that the meat can "season".

After twenty-four hours or more, line the loaves on a wire or broiler rack with drip pan. Preheat oven to 300 degrees.

Poke small holes (using a fork) in each loaf and bake for 30 minutes.

Remove from oven and unwrap loaves (with care - they will be HOT) then bake uncovered on the same pan for 45 minutes to 1 hour.

Cool and refrigerate. Serve sliced thin on crackers, toast, with cheese, etc.

You can also double the recipe to make more and once the sausages have cooled, they can be frozen to use later.

This is very simple and the result is excellent, as good as any summer sausage you can buy in a store.

This routine makes it easy cooking dinner for myself without to much work! That is a good cooking tips when you cook just for yourself, especially with recipes calling for ground beef and cooked chicken! NOTHING is considered a "leftover"!

Hamburger Helper and other casseroles are made, pastas and rice, especially brown rice, can be made ahead of time, bagged in portion sizes and frozen for future meals. Great cooking tips! I use good condiments, sauces not to expensive, everything that i buying is in a small portion!

I make a real effort to not keep an over abundance of items in the freezer. That is a great thing to do when you cooking by yourself!

My regular items are onions, garlic, tomatoes, mushrooms, radish and cooked rice! I love cooked rice! I always cook small portions! That is great cooking tips when you are single!

I love cooking, I choose several of my favorite meals, purchase my ingredients and containers that suit the type of meal you are cooking and then cook and freeze.

So, instead of prolonged parboiling, opt for cooking on a slow simmering heat as this can help in maintaining the nutritional value of your food.

In Chinese cooking, smoking and cold mixing is also popular. These two methods involved precooked food ingredients instead of raw food. Cold mixing uses parboiled or scalded ingredients which are then mixed into salads and chilled before being served. Roasting on the other hand lets the raw ingredients marinate before being barbecued over direct heat.

And finally, another Chinese cooking method is poaching, where ingredients are cooked in liquid a little below the boiling point. This style of Chinese cooking is highly recommended especially when cooking delicate fish where you want the fish to be cooked just till the meat is tender.
