The onion is one of the oldest vegetables known to man and an essential ingredient in just about every, cuisine of the world. It is hard to imagine a vegetable basket without onions for they are the basis of so many different recipes.

Onions are edible alliums, or lilies. Many varieties exist; all of which are edible, but only a certain number are commonly used for culinary purposes, because some of the more decorative varieties are bitter-tasting and, although not actually poisonous, are simply not palatable. Today, as more and more people look for natural healing remedies, onions are also keenly popular for their medicinal properties. Alliums are also very beautiful in the garden, where their decorative heads form a spectacular display. I always leave one or two leeks and onions to go to seed, giving me a display of large purple flower heads.

It is actually easy to make the onion the star of the dish! Not just by upping the quantities so that it dominates, but by cooking the onions slowly to draw out the delicious sweetness that is onions, a flavor unknown to anyone who simply fries them quickly at the beginning of a dish before adding other ingredients.

Raw, sliced, sauteed, chopped, stewed, pickled, roasted or baked - however an onion is cooked it is a delight and an essential only for infinitely variable international cuisine, but also for healthy and flavorsome diet. And what of the occasional tea. Well, that's a small price to pay. Experience it and enjoy!
